Amaretti biscuits are a popular Italian treat traditionally made with Saronno, a sweet, almond-flavoured Italian liquor. They are simple to make, as they only require three ingredients. As they are made with almond meal and egg whites, amaretti biscuits are both gluten-free and dairy-free. I have replaced the sugar with stevia/erythritol (natural sweeteners) which is perfect for anyone watching their insulin levels (diabetics rejoice) or their waistline. Another reason to enjoy these moist, dense and totally moreish almond treats!
*I used "Sugarless" organic stevia. It also contains erythritol.
*The addition of the extract/liquor imparts a stronger almond flavour.
*You can coat the biscuits in beaten egg white and roll in flaked almonds or pine nuts.
*You can also add 1 tbsp of lemon or orange zest.
