PROTEIN PANCAKES (SERVES 1-2)
These gluten-free pancakes are quick and easy to prepare and make a delicious high protein breakfast!
3 egg whites
½ cup rolled oats
½ cup low-fat cottage cheese
1 teaspoon baking powder
½ teaspoon cinnamon
Low-fat Greek or coconut yogurt
Fruit (e.g. berries, banana or poached pears)
Blend all the ingredients together (except the yogurt and fruit) in a blender or NutriBullet.
Heat a non-stick skillet/fry pan over a medium heat.
Spray with non-stick cooking spray and pour enough batter to make a pancake about 10 cm wide.
Once bubbles form and pop, flip the pancake.
Cook until golden brown, and then repeat with remaining batter.
Drizzle with a little rice malt syrup for some extra sweetness.
For a tropical twist, top with fresh mango, passion fruit and kiwi fruit.
