Everyone needs a 'go to' vanilla cupcake recipe up their sleeve and I'm pretty sure that this is it! These delicious cupcakes are so easy and simple to make, yet they are unbelievably light and fluffy! I have included two versions of the recipe, the first contains the usual suspects (flour, cream, eggs and sugar), while the second version is a healthier version that is dairy-free, processed sugar-free and made using spelt flour. You can substitute the spelt flour with gluten-free flour if you wish.

*Heat the coconut cream until smooth before adding to the eggs. Make sure that the mixture is lukewarm, not hot.
