Amaretti biscuits are a popular Italian treat traditionally made with Saronno, a sweet, almond-flavoured Italian liquor. They are simple to make, as they only require three ingredients. As they are made with almond meal and egg whites, amaretti biscuits are both gluten-free and dairy-free. In this recipe, I have replaced the sugar with xylitol, another reason to enjoy an extra bite or two of these moist, dense and totally moreish almond treats!
*For a finer texture, process the xylitol in a food processor until it resembles castor sugar.
*The addition of the extract/liquor imparts a stronger almond flavour.
*You can coat the biscuits in beaten egg white and roll in flaked almonds or pine nuts.
*You can also add 1 tbsp of lemon or orange zest.
