Bougatsa is a traditional Greek dessert typically made with filo pastry and a sweet semolina custard. In this recipe I have swapped the sugar for xylitol, a natural sweetener that is diabetic-friendly. Xylitol is a sugar alcohol that has 75% less carbohydrates than cane sugar and a low glycemic index (GI) of 7. As it has a negligible effect on blood sugar levels, it is a great sugar alternative for anyone trying to lose weight or improve their health. Keep in mind that as xylitol doesn't completely break down in the digestive system, excessive consumption may have a laxative effect.
