These popular biscuits derive their name from their special shape (no surprises there) and are particularly good dunked in coffee. If you have a particular disliking for the letter 's', then you could of course shape these biscuits into whatever shape you like. Perhaps you could spell the word 'delizioso'? These biscuits are made with spelt flour and are both dairy and sugar-free. If you prefer, you can swap the lemon zest with orange zest, or with one teaspoon of almond or anise extract.
*Xylitol is a sugar-free natural sweetener available from all good health-food stores. As xylitol grains are quite coarse, you can process it in a food processor until it has the same texture as castor sugar.
*You can use any unrefined oil you prefer, in this recipe I used rice bran oil.
